Tangia or Tanjia:
History of Tangia:

came out of the house to buy meat from the local butcher, a terracotta jar that was used only to store honey and butter, cumin and salt, a few garlic cloves, a lemon confit, a little rancid butter and a little olive oil, all in the jar with a glass of water; he went to the baker to put the jar on low heat just in the ashes. An hour and a half later La Tangia was ready and it's party time at home. Word of mouth, the Tangia has become the favorite dish of Marrakechi and a new recipe of Moroccan gastronomy.

The Tagine or Tajine:
The Tagine is the daily dish of Marrakechi, it’s made from the composition of meat, chicken or fish and vegetables of the season: potatoes, carrots, tomatoes, peas, beans, cords, cauliflower, endives… and also with dried fruits prunes, grapes and almonds; in addition to spices, with a very precise dosage.
The main different types of Tagine:

Couscous:

The Mechoui:
The Mechoui is the meat of mutton or lamb roasted whole on the spit on the embers of the fire and brush with melted butter. Very delicious, it’s the dish of the big ceremonies. The Mechoui is served as well in popular places specialized in the medina as well as the Moroccan restaurants of Marrakech.
Pastilla is a traditional dish, it’s served in large ceremonies; this delicious dish requires a delicate preparation, there are two types of pastilla:
- Pastilla with chicken or pigeons and almonds

Seffa:
Seffa is a very popular traditional dish in Morocco; it’s prepared with semolina, rice or vermicelli sprinkled with grilled almonds, raisins, icing sugar and cinnamon.

Rfissa or Trid:
Rfissa or Trid is the dish most loved by Moroccan women in general and Marrakechis in particular, it’s obligatorily prepared after childbirth; Very rich in food consisting of fine Moroccan pancakes (Msemen), farm chicken, onions, coriander, fenugreek, ginger, saffron; foods that allow women to regain strength after giving birth.
