Tangia or Tanjia:

History of Tangia:

Once upon a time, there was a man who came home from work in the evening tired and hungry after a long day's work; when he got home he found that his wife did not prepare dinner, he was unhappy;

came out of the house to buy meat from the local butcher, a terracotta jar that was used only to store honey and butter, cumin and salt, a few garlic cloves, a lemon confit, a little rancid butter and a little olive oil, all in the jar with a glass of water; he went to the baker to put the jar on low heat just in the ashes. An hour and a half later La Tangia was ready and it's party time at home. Word of mouth, the Tangia has become the favorite dish of Marrakechi and a new recipe of Moroccan gastronomy.

The Tagine or Tajine:

The Tagine is the daily dish of Marrakechi, it’s made from the composition of meat, chicken or fish and vegetables of the season: potatoes, carrots, tomatoes, peas, beans, cords, cauliflower, endives… and also with dried fruits prunes, grapes and almonds; in addition to spices, with a very precise dosage.

The main different types of Tagine:

- Meat or chicken + olives + French fries

- Meat or chicken + peas + potatoes and / or carrots

- Meat or chicken + Potatoes + olives

- Meat or chicken + onion + raisins

- Meat or chicken + peas + beans

- Meat + prunes + almonds

- Meatballs ( Kefta) + eggs

Couscous:

Couscous is the preferred dish of Marrakesh after the Friday prayer; over time, some families have made this appointment with couscous to Sunday at noon, it’s the rest day of the whole family.

There are two types of couscous, couscous with seven vegetables (Meat or chicken and the legumes of the season: carrots, zucchini, pumpkin, tomatoes, onions, turnips white and / or red, beans ...) which is often eaten and the couscous with Tfaya (Meat, onions and raisins) which is consumed from time to time when you want.

Very rich, because it’s composed of several elements; couscous, remains a very light dish and easy to digest.

  



The Mechoui:

The Pastilla:

Rfissa or Trid:
